Zingy Coconut Lime Smoothie

What's in it


1 cup of mangoes (frozen) or if not frozen add 1 cup of crushed ice 1 cup of coconut milk or water (if you don’t have a real coconut, use coconut milk – the refrigerated kind – not canned)

1/2 cup of orange juice (Minute Maid ® Pure Squeezed Low Pulp with Calcium and Vitamin D)

1/2 banana

3/4 cup coconut yogurt (or regular Greek yogurt)

1/2 cup fresh pineapple Juice of 1 and a half limes (about 6 tsp)

1/2 cup of kale (optional)

How to cook it


  • If you’re using a real coconut, we suggest drilling a hole (or two holes) – makes for easy pouring. If you’re using the kale – you’ll need to chop it up longer to make it drinkable – or add it already chopped – use a food processor for best results – then add to mixture. Combine all of the ingredients (except half of the lime juice) into a blender and mix until thoroughly blended. Our son’s experiment gave us this name for the smoothie, he squeezed extra lime into his drink (a quarter wedge each) which gives it the zing! If you don’t like zing, just miss this step (but it is delicious)!
