Stuffed Mushrooms

What's in it


1 tbsp. olive oil
1 tbsp. Smart Balance Light buttery spread
1/4 c. Italian bread crumbs
1/4 c. parmesan grated cheese
1 tbsp. dried or 2 cloves of crushed garlic
30 medium-sized fresh mushrooms

How to cook it


  • Wash mushrooms and remove stems carefully; chop up stems in a chopper or food processor
  • Saute garlic in olive oil and butter over low heat for a couple of minutes; add in chopped mushrooms and saute for another 5 minutes
  • Add in bread crumbs and parmesan cheese to mixture
  • Remove from stove and spoon mixture into each mushroom cap; place on cookie sheet. bake on 350 for 30 minutes (6 mushrooms equal one serving)
