Lemon Poppyseed Muffins

Lemony lemon poppy seed muffins with a sweet glaze.

What's in it

Ingredients

1/2 cup oil
2/3 cup sugar
2 eggs
zest of 2 lemons
1 1/3 cup all purpose flour
1 teaspoon baking powder
2 tablespoons poppy seeds
1/4 teaspoon salt
1/2 cup buttermilk
2 tablespoons fresh lemon juice
1 teaspoon vanilla
2/3 cup confectioners sugar
2 tablespoons fresh lemon juice

How to cook it

Directions

  • Preheat oven to 350
  • Beat oil and sugar
  • Add eggs, then lemon zest
  • In a separate bowl combine flour, baking powder, poppy seeds, and salt.
  • Add dry ingredients to wet gradually, adding buttermilk and lemon juice as needed until smooth. Add vanilla.
  • Pour into greased muffin pan and bake for 25-35 minutes and toothpick comes out clean. Let cool.
  • Combine confectioners sugar and lemon juice.
  • Glaze when muffins have cooled.
