Bacon and Eggs

This muffin-tin version of bacon and eggs is the perfect way to start off the day.

What's in it


9 large eggs
½ lb. bacon
1 tomato
2 green onions (scallions)
1 c. diced cremini mushrooms
1 c. chopped arugula
1 tbsp. fresh thyme

How to cook it


  • Preheat oven to 375 degrees F. In a large bowl, lightly beat eggs. Stir in cooked bacon, tomato, green onions, mushrooms, arugula, thyme, and salt and pepper to taste.
  • Divide mixture among 12 medium-sized muffin tins and cook until set, about 20 minutes. Let cool several minutes before unmolding.
