Organic Chicken Salad

10 organic sweet mini bell peppers, roasted, chopped
5oz (142g) organic baby spinach, chopped
1 lbs Campari tomatoes, cut in half lengthwise
1 organic chicken breast, cooked, cut into cubes
1 tablespoon olive oil
salt, fresh black pepper to taste
juice for ½ lemon
1 teaspoon fresh oregano
- Mix the roasted bell peppers, baby spinach, tomatoes, olive oil, lemon juice, salt and pepper in a big salad bowl. Add chicken on top, sprinkle with oregano and serve with cheesy garlic bread.
