Mom’s Pumpkin Soup

Ingredients
2 tablespoons butter
1 small onion finely chopped
2 - 15 oz. cans of solid packed pumpkin
1 quart water
1 cup milk
2 tablespoons maple syrup
1/2 teaspoon salt
pumpkin spice to taste
freshly ground pepper to taste
Directions
- Melt butter in large saucepan over medium heat. Add onion and cook, stirring often until the onions are soft about 6-8 minutes. Add pumpkin, water, milk, syrup, salt, pepper and pumpkin spice. Bring to boil. Reduce heat and simmer, whisking often. We cooked ours for about an hour letting the soup thicken right up. Keep tasting until you find the flavor and consistency you like! Enjoy!
