Mom’s Amazing Meatballs

Ingredients
2 pounds ground beef
1 pound ricotta
1 cup Italian bread crumbs
2 eggs
freshly grated Romano and Parmesan
fresh parsley
Salt and freshly ground pepper
Directions
- Combine all ingredients in a large bowl. Grated cheese, parsley and salt and pepper to taste.
- Form medium sized meatballs (the larger they are the longer you need to cook them).
- Brown in a pan with some olive oil. Turning to brown all sides.
- Add to sauce. Simmer and serve over pasta.
