Lemon Poppyseed Muffins

Lemony lemon poppy seed muffins with a sweet glaze.

1/2 cup oil
2/3 cup sugar
2 eggs
zest of 2 lemons
1 1/3 cup all purpose flour
1 teaspoon baking powder
2 tablespoons poppy seeds
1/4 teaspoon salt
1/2 cup buttermilk
2 tablespoons fresh lemon juice
1 teaspoon vanilla
2/3 cup confectioners sugar
2 tablespoons fresh lemon juice


  1. Preheat oven to 350
  2. Beat oil and sugar
  3. Add eggs, then lemon zest
  4. In a separate bowl combine flour, baking powder, poppy seeds, and salt.
  5. Add dry ingredients to wet gradually, adding buttermilk and lemon juice as needed until smooth. Add vanilla.
  6. Pour into greased muffin pan and bake for 25-35 minutes and toothpick comes out clean. Let cool.
  7. Combine confectioners sugar and lemon juice.
  8. Glaze when muffins have cooled.
