Garbanzo Beans and Spinach (Gluten Free)

2 tsp olive oil
1 each medium garlic cloves
1/4 cup chopped red bell peppers
1 lb fresh spinach leaves
1/2 cup canned garbanzo beans (chickpeas), unsalted
1 pinch salt
1 pinch black pepper


  1. In large skillet, heat olive oil over medium high. Add garlic and bell pepper and sauté 5 minutes.
  2. Add beans and cook 3-4 minutes until beans are thoroughly heated.
  3. Add spinach, salt, and pepper. Cook, stirring often, until the spinach wilts. Serve.
