Creamy Avocado Yogurt Dressing

A great dressing that will become a household favorite.

1 ripe avocado
6 oz. plain Greek yogurt
1 lemon, juiced
1/2 tspn. fresh dill, finely chopped
1/4 tspn. fresh parsley, finely chopped
1 small garlic clove
1/3-1/2 cup extra virgin olive oil
Salt and pepper to taste


  1. In a food processor or blender combine avocado, yogurt, lemon juice, dill, parsley and garlic clove. Pulse one or two times to incorporate. While machine is running stream in extra virgin olive oil. for a thicker dressing use only about 1/3 cup; for a thinner consistency use about 1/2 cup. Blend until creamy. Season with salt and pepper. Toss in a salad or use as a dip. Store covered in refrigerator.
