Cranberry Apple Upside Down Cake

Ingredients
3/4 c. butter, softened and divided
1/2 c. of firmly packed light brown sugar
1/4 c. honey
2 large Gala apples, peeled and cut into 1/4 inch slices
1 c. fresh cranberries
1 c. granulated sugar
2 large eggs
1 1/2 c. all purpose flour
1 teas. baking powder
1/2 c. milk
1 teas. vanilla extract
Directions
- Preheat oven to 350 degrees. Melt 1/4 cup of butter over low heat an then pour into 9 inch round lightly greased cake pan with sides that are at least 2 inches high (I used a bundt pan since my cake pan wasn't tall enough). Sprink with brown sugar. Drizzle honey over brown sugar. Arrange apple slices in a circle - overlapping is needed. Sprinkle with cranberries.
- Beat granulated sugar and remaining 1/2 cup of butter at medium speed with electric mixer until blended. Add eggs one at a time beating until blended after each addition.
- Stir together flour and baking powder. Add flour mixture to sugar mixture alternating with milk. Beginning and ending with flour mixture. Beat at low speed, just until blended after each addition. Stir in vanilla and spoon batter over cranberries in pan.
- Bake at 350 for 45 to 50 minutes until wooden pick inserted into center comes out clean. Cool for 10 minutes. Run a knife around the edges to loosen. Invert cake onto serving plate spooning any topping onto cake.
