Carrie’s Cranberry Cobbler

This cranberry cobbler is a perfect blend of tart berries with the sugary goodness of crisp cobbler.

One 9-inch pie plate


1 12 oz bag fresh cranberries
1 cup chopped walnuts or pecans
1 1/2 cups Imperial Sugar Extra Fine Granulated Sugar
1 cup all-purpose flour (spoon and sweep method*)
1/4 teaspoon salt
1/2 cup melted unsalted butter
1/4 cup canola oil
2 eggs
Cooking spray


  1. Preheat oven to 325°F.
  2. Mix cranberries, chopped nuts and 1/2 cup sugar and place into a greased 9 inch deep dish pie plate.
  3. In a separate bowl, combine flour, remaining sugar, butter/margarine, oil, eggs and mix well.
  4. Pour this mixture evenly over cranberry mixture, gently spreading to edges. Bake for 55 minutes to 1 hour until crust is firm and golden.
